Rooted 80% Dark is our most cacao-forward expression, made with farm-grown cacao sourced from Kerala and Karnataka. These southern Indian growing regions provide the foundation for a bar in which provenance and cacao intensity matter more than added flavour.
Season
This is a chocolate for all seasons, although its deeper cacao profile is particularly satisfying during the monsoon and winter or at the end of a meal. At 80%, it is designed for slower tasting and for those who prefer less sweetness and a more pronounced cacao character.
Make
Indian cacao is stone-ground in small batches and crafted into an 80% dark chocolate, allowing cacao to dominate the flavour profile. With less room for sweetness to lead, roasting, fermentation and grinding become particularly important to the final aroma, bitterness and finish.
Tradition
The tradition behind this bar is not an ancient Indian recipe but the newer story of Indian-grown cacao itself. Cocoa adapted to the humid plantation systems of southern India and today forms part of diversified farms in states including Kerala and Karnataka; Rooted turns that agricultural story into a premium chocolate centred on the bean.
Modern Use
Break off a small piece of Rooted 80% Premium Dark Chocolate and allow it to melt slowly, or pair it with espresso, nuts or unsweetened tea. Higher-cacao chocolate naturally delivers a more concentrated cacao flavour and generally leaves less space for added sugar than lower-cacao styles, while remaining a food to enjoy in moderation.
