Place

Known variously in India as rajgira and ramdana, grain amaranth has an especially strong association with India's Himalayan and hill food traditions, while today it is consumed across the country. This hardy pseudocereal has survived in traditional food systems even as many other grains became more commercially dominant.

Season

Amaranth is not restricted to a single eating season, but its place in Indian fasting and festive foods gives it particular cultural relevance during periods such as Navratri and other vrat traditions. Its light crunch also makes it an easy all-season partner for chocolate.

Make

Popped or prepared amaranth grains are brought together with chocolate, creating a contrast between smooth cacao and the delicate crunch of rajgira. It is a contemporary chocolate format built around one of India's familiar traditional grains.

Tradition

Rajgira—literally associated with the idea of a “royal grain”—has remained part of Indian household cooking through laddoos, chikki-like preparations, rotis and fasting foods. ICAR identifies grain amaranth as a nutritionally important pseudocereal that continues to be cultivated in traditional and often remote farming systems.

Modern Use

Enjoy Amaranth Chocolate as a crunchy snack, with coffee or as a small dessert. Amaranth is naturally gluten-free and provides protein, fibre and minerals; pairing it with cacao gives this traditional grain an accessible contemporary expression.
